Spelt and agave gingerbread men

In and effort to use more whole and low GI foods, I have adapted a standard gingerbread man recipe to include spelt flour (instead of plain) and agave syrup (instead of sugar). The biscuits were extremely easy to make and tasted delicious. My three year old son helped me make them and we added some to our Christmas tree. They are festive and make the house smell like Christmas.


Preheat oven to 180F.

Stir together

  • 3 cups of spelt flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Blend together

  • 113 grams unsalted butter (if you use a food processor you can use the butter straight from the fridge)
  • 1/3 cup agave syrup
  • 1 large egg
  • 1/3 cup molasses


Combine two mixtures.

When mixture is like playdough wrap it in plastic wrap and put it in the fridge for 20 minutes. I put mine in overnight, but had to rest it on the bench for 30 minutes before I could use it.

Take dough out of the fridge and put it between to pieces of baking paper. Roll it (with a rolling pin) to your desired thickness. Take off top sheet of paper and cut out the shapes and put them on a lined baking tray. If you are planning to put your biscuits on your christmas tree,  make a hole in each with the blunt end of a skewer.

Decorating tip: I also used the sharp end of the skewer to make little holes all over some on the biscuits.


Add one tray to the oven at a time. The biscuits should only take about 10 minutes. Don’t let them darken. You should be able to smell when they are done, if not, put a timer on.

Cool, tie, decorate

When they are ready, take them out of the oven and cool them over night.

Tie ribbon through the hole and/or decorate them.

What is spelt?

Spelt is a non wheat flour that has been used for  centuries.  It does have some gluten in it, but the gluten breaks down quite easily. It has a high nutritional value and lower calories than ‘normal’ flour.  For more on spelt visit ‘Baking Bites‘.

What is agave syrup?

Agave syrup comes from the agave plant. They are very common in Australia (although not native), in fact I just realised I have two in my backyard. The syrup is sweet with depth, a lighter version of maple syrup. It has a low GI score (it’ll give you a long slow release of energy rather than the quick peak and subsequent crash of high GI sugars.

Coles has a new line of whole food products. I bought the agave and the spelt from there. I have a feeling you can buy it for a variety of places though.
